Basic crispy rice bar ingredients:
1 cup brown rice syrup (sub: rice malt syrup or honey)
½ cup almond butter (sub: whole brown tahina or any nut butter)
3 cups crispy brown rice cereal
Optional ingredients:
1 ½ tbsp spirulina (or other greens powder)
2 tbsp lightly toasted pumpkin seeds (may freshly grind seeds)
1 tbsp black or brown sesame seeds
2 tbsp sunflower seeds (may freshly grind seeds)
1/3 cup flax seeds (or freshly ground flax meal)
1/3 cup chopped walnuts or pecans
1 cup puffed quinoa, millet, amaranth or other grain
1 ¾ cups organic oats
1/3 cup organic unsulfured raisins
1 tsp pure vanilla extract
1 tsp cinnamon
¼ cup pomegranate, blueberry or cherry juice (if you find a bit dry)
2 tbsp rice bran/oat bran
1/3 cup carob powder (okay, organic cocoa powder will do just fine)
Method:
Variation 1:
In large saucepan, heat rice syrup and almond butter over low heat until creamy. Remove from heat and stir in rice cereal and other ingredients until well coated. Press into shallow, square casserole dish. Allow to set until firm (store in refrigerator). Cut into squares and serve.
Variation 2:
Omit crispy rice cereal. In large saucepan, heat rice syrup and almond butter over low heat until creamy. Remove from heat and stir in oats, seeds, puffed cereal, raisins, spirulina, vanilla and cinnamon. Modify ingredients where you desire. Mix until well coated. Press into shallow, square casserole dish. Allow to set until firm (store in refrigerator). Cut into squares and serve.
